Flo’s Nutritional Recipes – Fruit and Nut Flapjacks

Loaded with vitamins, minerals and antioxidants these flapjacks are a great source of beta-glucan which is a type of soluble fibre that slows down carbohydrate absorption preventing blood sugar spikes, giving you energy for longer.

Blackberry Clinic Health Advisor, Flo, who works at Blackberry Clinic Exeter has a passion for nutrition and creating delicious and nutritious recipes which are quick and easy to make, even with a busy lifestyle! Flo has an MSc in Sports Nutrition but you don’t need to be sporty to give these recipes a go!  We are going to share some of her recipes and try them ourselves!

FRUIT AND NUT FLAPJACKS

TIP: Get creative with your selection of dried fruit and nuts (a personal favourite of mine is a cranberry and pecan nut flapjack)

MAKES 12 SLICES
Per Serving : Calories: 182 Carbohydrates: 23 g, Fat: 8g, Protein: 3g

INGREDIENTS

  • 150g Oats
  • 150g Pitted dates
  • 100g Butter
  • 50g Dried Fruit e.g. raisins, apricots or glacier cherries
  • 50g Toasted Nuts e.g. hazelnuts, pecan nuts or walnuts
  • 3 Tbsp Mixed seeds
  • 4 (generous) tbsp Honey or Golden Syrup

Prep Time: 10-Minutes, Baking Time: 20-Minutes

METHOD

  1. Pre heat the oven to 190 degrees/170degrees fan/gas 5 and line an 18cm square tin with baking parchment.
  2. Put the dates into a food processor and blend until they form a smooth paste.
  3. Put the date paste, butter, and honey into a saucepan over the hob and stir until the butter has melted. Alternatively place the dates, butter and honey into microwaveable dish and heat in the microwave for 2 minutes, stir and repeat this process until the butter has melted.
  4. Add all the remaining ingredients into the pan or microwaveable dish and stir until well mixed.
  5. Spread the mixture into the tin and bake in the oven for 20 mins or until golden brown.
  6. Remove from the oven and allow it to cool before cutting it into slices, then ENJOY !
